Creamy Tofu and Spinach Lasagna


It’s time for a 100% vegetable, creamy lasagna! And it is as easy to prepare as a piece of cake. No complicated ingredients; with smooth and irresistible texture and flavour. Try this ideal dish for family dinners, special occasions or just to have it ready from one day to another.

DIRECTIONS

  1. Pre-cook the oven at 180 ºC.
  2. In a food processor, put the tofu soy drink, salt and nutmeg. Mix until all the ingredients blend together into a soft cream.
  3. In a baking dish, assemble the lasagna by alternating one layer of lasagna noodle, one layer of tofu cream and another one of spinach.
  4. Top with tofu cream and sprinkle some brewer’s yeast.
  5. Cook in the oven for 25-30 minutes until golden and bubbling.
  6. Let it rest for 5 minutes before serving.
