Pumpkin is the queen of autumn. It is antioxidant and a source of potassium and fiber, with a high content in vitamin A. If you want to include some pumpkin in your diet, here you have a new recipe that combines its sweetness with the creaminess of risotto and the crunchy and spicy touch of falafel.
In a pot, pour some water and, when it starts boiling, dissolve
2 tablets of vegetable broth in it.
In another pot, put some olive oil and cook the onion and
pumpkin.
Then, add the rice and half of the vegetable broth. Stir
frequently, so the rice slowly absorbs the broth. Little by little, as the
broth is absorbed, add the rest.
Cook the risotto until the rice becomes creamy and al dente.
Add 30 ml of Soria Natural’s soy drink and mix to get an even
softer texture.
Then, add salt and black pepper to your taste.
On another pan with abundant oil, fry the falafel until it is
crunchy on the exterior.
